Ingredients:
- HHF 2 lbs bone-in beef short ribs
- 2 cups red wine
- 1 onion, chopped
- 3 carrots, chopped
- 2 tbsp tomato paste
- 4 garlic cloves, minced
- 2 cups beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Season short ribs with salt and pepper.
- Sear short ribs in olive oil on all sides in a Dutch oven.
- Remove ribs and sauté onions, carrots, and garlic.
- Add tomato paste and cook for 2 minutes. Pour in wine and reduce by half.
- Add beef broth, return ribs to the pot, and cover. Simmer on low for 3 hours.
- Serve over mashed potatoes or polenta.
