Scottish Highlands are a slow maturing heritage breed of cattle. Everyone recognizes the breed due to their thick winter coats and their horns. Scottish Highlands are also ferocious browsers compared to most beef breeds. The breed originated in the mountains of Scotland where the vegetation wasn't always the most conducive to raising cattle. But the breed adapted and became a breed that can thrive on all kinds of vegetation, and it is still a characteristic of the breed today. We often see our cattle browsing on different brushes and weeds that other cattle might not even turn their nose at.
Because of their slow growth and their thick insulative fur, their beef is also rich in protein and iron. It is unsurpassed for flavor, tenderness and juiciness. This comes from having just the right amount of marbling to give a succulent flavor that is typical of old-fashioned traditional beef.
