Slow-Cooked Brisket with Root Vegetables

Ingredients: 

  • HHF 5-6 lbs brisket 
  • 4 carrots, chopped 
  • 3 potatoes, chopped 
  • 2 onions, sliced 
  • 4 garlic cloves, minced 
  • 2 cups beef broth 
  • 2 tbsp olive oil 
  • Salt and pepper to taste 
  • 2 tbsp fresh thyme, chopped 

Instructions: 

  • Season the brisket with salt, pepper, and thyme. 
  • In a large skillet, heat olive oil and sear the brisket on all sides. 
  • Place brisket in a slow cooker with carrots, potatoes, onions, garlic, and broth. 
  • Cook on low for 8 hours until tender. 
  • Slice and serve with vegetables.
