Stovetop Mediterranean Chicken

Ingredients:

  • HHF 3 Boneless Skinless Chicken Breasts
  • 2 tbsp olive oil
  • 1 small red onion, sliced
  • 1 bell pepper, sliced
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions:

  • Heat oil in a large pan over medium heat.
  • Sauté onion and bell pepper for 5 minutes.
  • Add chicken, season with salt, pepper, and oregano.
  • Cook chicken for 6 minutes on each side.
  • Top with olives and feta cheese before serving.
