Bone-In Rib Chops with Apple-Onion Compote

Ingredients: 

  • HHF 10-12 oz Bone In Rib Chops 
  • 2 apples, peeled and sliced 
  • 1 onion, thinly sliced 
  • 1/4 cup apple cider vinegar 
  • 2 tbsp brown sugar 
  • 1 tsp cinnamon 
  • Salt and pepper to taste 
  • 1 tbsp olive oil 

                  Instructions: 

                  • Preheat oven to 375°F (190°C). 
                  • Season rib chops with salt and pepper. 
                  • In a skillet, heat olive oil over medium heat. Sear the rib chops for 2-3 minutes per side until browned. 
                  • In the same skillet, sauté apples and onions for 5 minutes. Add apple cider vinegar, brown sugar, and cinnamon; simmer for 3-4 minutes. 
                  • Place rib chops in a baking dish and pour the apple-onion mixture over them. 
                  • Bake for 20-25 minutes until the internal temperature reaches 145°F (63°C). 
                  • Let rest for 5 minutes before serving.
