- HHF 16oz pork tenderloin
- 6 slices bacon, chopped
- 4 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 2 tsp thyme
- Salt and pepper to taste
- In a skillet, cook bacon until crispy, set aside, and drain the fat.
- In the same skillet, brown pork on all sides.
- Add browned pork, bacon, potatoes, carrots, onion, garlic, thyme, salt, and pepper to the crockpot.
- Pour chicken broth over ingredients.
- Cook on low for 7-8 hours or high for 4-5 hours, until pork is tender.
- Adjust seasoning and serve hot.
