Crockpot Bacon and Pork Stew

Ingredients:
  • HHF 16oz pork tenderloin
  • 6 slices bacon, chopped
  • 4 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 tsp thyme
  • Salt and pepper to taste

Instructions:
  • In a skillet, cook bacon until crispy, set aside, and drain the fat.
  • In the same skillet, brown pork on all sides.
  • Add browned pork, bacon, potatoes, carrots, onion, garlic, thyme, salt, and pepper to the crockpot.
  • Pour chicken broth over ingredients.
  • Cook on low for 7-8 hours or high for 4-5 hours, until pork is tender.
  • Adjust seasoning and serve hot.
