Also called the "Butcher's Steak", the hanger steak is a butcher's best kept secret. The muscle it comes from supports the diaphragm between a cow's leg and is just kind of "hanging there" so it is extremely tender since it doesn't support a lot of functions. It is an extremely exclusive cut of meat as there is only one 16-32 ounce hanger steak per animal making it rarer than even the tenderloin. Be careful cooking as you are looking for a nice medium. If overcooked it can lose its tenderness, if underdone it can turn out slimy. Cooked to perfection is a chef's kiss.
