(1) 2-3 pound rump roast

Cut from the round section, the rump roast is very lean and makes an excellent pot roast. Once done, slice thinly across the grain for maximum tenderness.

Rump roast is a versatile cut that shines in slow-cooked, flavorful dishes. Here are three delicious ways to use it:

1. Slow-Cooked Pot Roast

Cook your rump roast low and slow in a crockpot or Dutch oven with beef broth, onions, carrots, potatoes, and herbs for a classic, tender pot roast. The slow cooking process breaks down the fibers, resulting in a melt-in-your-mouth texture.

2. Shredded Beef for Tacos or Sandwiches

Slow cook the roast with garlic, onions, chili powder, cumin, and lime juice, then shred it for tacos, burritos, or sandwiches. Serve with fresh toppings like avocado, cilantro, and queso fresco for a flavorful meal.

3. Oven-Roasted for Sliced Beef

Season the roast with salt, pepper, and herbs, then roast it low and slow in the oven until medium-rare to medium. Slice it thinly for roast beef sandwiches, meal prepping, or serving with mashed potatoes and gravy.
